The recipe is pretty simple and won’t take more than 15 minutes of your time. It’s a nutritious meal that requires no cooking. To keep things raw, you should use sprouted hummus, although the recipe works great with beet hummus as well. Fresh veggies are a must and will add some color and nutrition to your meal. You should add hemp seeds as well, as they offer numerous health benefits.

For the dressing, we recommend a tahini dressing which can be prepared easily. The recipe is a great meal for 2 or appetizer for 4, and will surely please your palate. Here’s what you need to do:


1 romaine lettuce head


A cup of cherry tomatoes

½ a cup of sprouted or beet hummus

A cup of shredded carrots

½ a cup of alfalfa sprouts

¾ of a cup of sliced red cabbage

1 avocado

1 tablespoon of hemp seeds


80 gr. of tahini

1 tablespoon of maple syrup

2 tablespoons of lemon juice

A pinch of sea salt




Before starting, you need to prepare the hummus first. Next comes the sauce – mix the lemon juice, maple syrup, tahini, some water and a pinch of sea salt and stir well. Taste the sauce and adjust the flavor as you want.

Now, arrange the lettuce leaves on a platter and fill them with a tablespoon or two of hummus, then top them with the veggies and hemp seeds. Drizzle the tahini sauce on top and serve the lovely raw romaine taco boats. Bon appetite!
